I feel like I have been posting quite a few recipes lately, but I have been in a bit of baking frenzy in the lead up to Xmas! 
Fudge is the perfect edible Xmas gift – this recipe is quick and easy to make and tastes divine! The texture is lovely and smooth, this is my go-to fudge recipe and a must try for lovers of all things sweet.

Caramel and White Chocolate Fudge

1 395g can of sweetened condensed milk
100g butter (unsalted)
1t vanilla essence
1C brown sugar
3T golden syrup
100g white chocolate (broken into small pieces)

-       Add all ingredients to a saucepan (except for the chocolate) and stir with a wooden spoon or spatula over a medium heat until mixture just starts to boil
-       Reduce heat to low and simmer for 10minutes stirring constantly
-       Remove from heat and quickly mix through chocolate until melted
-       Pour into a 10cm x 20cm tin lined with foil and put in the fridge to set
-       Cut into squares and enjoy!

TIP: ensure you stir constantly, it feels like forever but this is the key to the rich creamy texture.
